Steam Whistle Ice Cream
Recipe was submitted by Ryan Phillips and Starr Wilson, from Liaison College, Brampton, Ontario.
Directions:
Mix Crème Anglaise over a hot water bath until thick and creamy. Whisk in whipping cream and vanilla. Pan fry almonds, sugar and Steam Whistle beer until large clumps form. Then, in a small pot, add sugar and Steam Whistle Beer until a caramel forms. Then stir in cream and milk until mixture is not translucent. Mix the almonds into the ice cream and serve with a drizzle of caramel.
Yields 1.25 L
Ingredients
Ice Cream:
- 12 Egg Yolks
- 8oz (250 g) Sugar
- 2 cup (500 ml) Milk
- 1/2 cup (250 ml) Steam Whistle Beer
- 1 tbsp (15 ml)Vanilla
- 1 cup (250 ml) whipping Cream
Almond Mix:
- 1 cup (250 ml) ground almonds
- 1/2 cup (125 ml) Sugar
- 1/4 cup (60ml) Steam Whistle Beer
Steam Whistle Caramel:
- 500g sugar
- 125g Steam Whistle Beer
- 375mL Heavy Cream
- 250mL Milk
