Dave Allen's Best Beer Chili Ever

This recipe was the Silver Medal Winner from the Winterfest Minden 3rd Annual Chili Competition, held on Sunday February 14th 2010 and was submitted by Dave Allen from Haliburton's 100.9 Canoe FM.

Directions

  1. Brown and drain fat from meat
  2. Simmer onions and green peppers in 1 tbsp olive oil, 5 min.
  3. Add garlic and bay leaves, continue cooking med-low 2 min.
  4. Return meat to sauce pan with onions, green pepper and garlic
  5. Add all liquid ingredients, simmer for 30 min. uncovered
  6.  Meanwhile stir all dry ingredients in a cup
  7. After 30 min. add dry ingredients
  8. Simmer for 1 hour uncovered
  9. During last 20 min. add kidney beans

Ingredients

  • 2lb lean ground beef
  • 2 large onions chopped
  • 1 large green pepper
  • 1 tsp basil
  • 28oz tin diced tomatoes
  • 1 clove garlic
  • 19 oz tin Aylmer’s Accents Chili
  • 2 bay leaves
  • 1 tbsp liquid beef Bovril
  • 1 tsp salt
  • 1 bottle Steam Whistle Pilsner
  • 1 tsp paprika
  • 2 tsp Worcestershire sauce
  • 2 tsp ground cumin
  • 1 tbsp quality wine vinegar
  • 2 tsp oregano
  • 1/2 tsp Tabasco sauce
  • 1 tbsp black pepper
  • 2-14 oz cans kidney beans
  • 2 tbsp chili powder
  • 1 tbsp Frank’s Red Hot Sauce (Xtra hot if preferred)
  • 2 tbsp brown sugar
