Steam Whistle Jerk Chicken

In a food processor blend all the marinade ingredients minus the oil and the beer.

Place the chicken into Ziploc bags and generously spoon the marinade over top. Seal the bags and press out the excess air. Let the chicken marinate refrigerated overnight.

Grill the chicken over medium high heat 10 to 15 minutes on each side or until it reaches 174F. Spritz the beer regularly every few minutes as the chicken grills. Transfer the chicken as it is cooked with tongs to the upper rack until all the chicken is cooked. Serve hot.




5 lbs chicken legs and thighs


2 cups finely chopped scallion

1 Scotch bonnet (or for milder flavour use Jalapeno)

2 tablespoons soy sauce

2 tablespoons fresh lime juice

5 teaspoons ground allspice

3 teaspoons dry mustard

2 bay leaves, center ribs discarded and the leaves crumbled

2 garlic cloves, chopped

1 tablespoon salt

2 teaspoons sugar

2 teaspoons cilantro

1 teaspoon cinnamon

2 cups of Steam Whistle beer and a spray bottle

Oil for brushing the grill
