Our Beer

Pure Pilsner

Steam Whistle is one of the only remaining Pilsners in the world that still adheres to the strict standards of the Bavarian Purity Act of 1516. We brew using only pure spring water, malted barley, hops and yeast. No corn syrup, no foam enhancers, no artificial preservatives.

Our Ingredients

Pure Spring Water

Since water is the most important ingredient in beer, we make sure to only use purest-tasting spring water from Caledon, Ontario. Unlike many breweries who use harsh chemicals to treat tap water, our water comes from an aquifer deep below the earth’s crust—rich in minerals and ready for brewing.

Malted Barley

For Steam Whistle, we use only Golden Two Row Barley from Saskatchewan. This beautiful grain is distinguished by its superior harvest and celebrated around the world as one of Canada’s finest exports.

Hops

This delicate cone flower brings is the spice of beer. To brew a truly authentic European Pilsner we have sourced fine Czech and Bavarian hops. These hops create balance in our beer and produce the pleasant aromas and bitterness.

Yeast

Our beer is brewed using bottom-fermented lager yeast from Hungary. Fermentation is one of the most challenging processes in brewing an authentic Pilsner, and having the right yeast makes all the difference in the finished product.

Our Process

At a time when big breweries have abandoned tradition in favour of speeding up production, we refuse to take shortcuts. We follow the same decoction brewing methods that put Pilsner on the map hundreds of years ago, which involves boiling part of the mash at higher temperatures to carmelize the barley sugars and deliver a rich, malty flavour and a creamier head on the poured beer. And we still uphold the standards of the Bavarian Purity Act of 1516. Because purity makes perfect beer, and perfect beer takes time. Besides… what’s the rush?

Why A Pilsner

At Steam Whistle, we like to say we do one thing really, really well, and that’s brew a premium Pilsner. Pilsner is one of the most challenging styles of beer to perfect; it requires a singular focus and years of training to get it right. Just ask our Czech-born Brewmaster, Marek Mikunda, whose pursuit of the perfect Pilsner has taken him around the world, and eventually brought him to our brewhouse where he oversees production. We dedicate ourselves to making Pilsner, because it’s one of the most refreshing beers. Golden in colour, smooth and delicate in flavour, we think we make one of the best pilsners in the world—and the world thinks so, too.

Brewing A World Class Pilsner

Steam Whistle has a singular vision: to produce a pilsner beer-lovers across the country can be proud of. Inspired by European tradition, but brewed fresh, at our independent Canadian brewery.
